They prepare dishes such as juicy hamburgers, crunchy sandwiches, fresh fish and grilled chicken, essential to a successful menu. &nbsp;However, in addition to investing in good equipment, such items need to be cared for to ensure ideal performance and food safety. In high-demand environments like professional kitchens, good upkeep prevents problems such as cross contamination and equipment failures. &nbsp;With this in mind, <a href="https://www.instagram.com/tramontinahospitality/" target="_blank" rel="noopener noreferrer">Tramontina Hospitality</a> has prepared a quick guide to help you keep your griddles and grills in excellent condition. Before starting, make sure you have the following materials: gloves, safety goggles, alkaline descaling detergent, sponge, spatula, clean cloth, lime or vinegar and vegetable oil. &nbsp;Iron or Carbon Steel Griddles: &nbsp; &nbsp;1. Slightly cool the griddle after use, leaving it warm; &nbsp; &nbsp;2. Remove residues with a metal spatula, scraping food remnants and charred grease; &nbsp; &nbsp;3. Apply alkaline detergent over the hot griddle, at a temperature between 70 and 110 °C (158 and 230 °F). Use enough to cover the surface; &nbsp; &nbsp;4. Scrub with an abrasive sponge to remove the charred residue. If necessary, apply the detergent again until all grime is removed; &nbsp; &nbsp;5. Rinse using a container of water, pouring it a little at a time to avoid spillovers; &nbsp; &nbsp;6. Wipe with a damp cloth to remove loose residue and excess detergent; &nbsp; &nbsp;7. Freshen the surface with lime juice or vinegar to remove any chemical residue. Rinse immediately after using acid; &nbsp; &nbsp;8. Season the surface by applying a thin layer of vegetable oil, spreading it evenly with a paper towel to prevent oxidation. &nbsp;Char Broilers and Grills: &nbsp; &nbsp;1. Slightly heat up the appliance for a few minutes to soften grease and food residues; &nbsp; &nbsp;2. Brush the grill with a steel-bristle brush to remove stubborn dirt; &nbsp; &nbsp;3. Remove the grate from the appliance with oven gloves and spray liquid alkaline detergent on it in a sink while still hot, at a temperature between 70 and 110 °C (158 and 230 °F); &nbsp; &nbsp;4. Scrub with an abrasive sponge, removing all residue; &nbsp; &nbsp;5. Rinse well, using a little water at a time, and wipe with a damp cloth to remove excess grime; &nbsp; &nbsp;6. Dry completely to keep rust from forming; &nbsp; &nbsp;7.
