Sago is one of those classics that cross generations, carrying memories, affection, and flavor. Today, it gets a special reinterpretation: a gourmet touch with salted caramel and the smoothness of vanilla. A different combination, easy to prepare, and perfect for transforming a traditional sweet into something even more memorable.<h3>Ingredients</h3><h4>For the Sago:</h4><ul><li>250g sago&nbsp;</li><li>800 ml water&nbsp;</li><li>800 ml whole milk&nbsp;</li><li>2 egg yolks&nbsp;</li><li>250g sweetened condensed milk&nbsp;</li><li>50g of the already prepared caramel&nbsp;</li><li>1 teaspoon vanilla extract or paste&nbsp;</li></ul><h4>For the Caramel:</h4><ul><li>300g sugar&nbsp;</li><li>90g unsalted butter&nbsp;</li><li>200g heavy cream or fresh cream&nbsp;</li><li>1 teaspoon vanilla&nbsp;</li><li>1/2 teaspoon fleur de sel&nbsp;</li></ul><h3>Instructions&nbsp;</h3><ol><li>In a pan, add the sugar and cook over low heat. Stir until melted and it reaches a golden hue.&nbsp;</li><li>Incorporate the butter, stirring constantly over low heat until it reaches an amber tone.&nbsp;</li><li>Turn off the heat and carefully add the heavy cream. Stir until smooth.&nbsp;</li><li>Finish with the fleur de sel and vanilla. The cream will thicken as it cools.</li><li>Heat the water in a nonstick pan. Using nonstick is the secret so the pearls do not stick to the bottom, ensuring a perfect texture.&nbsp;</li><li>Add the sago, which has been hydrating for 30 minutes, and mix occasionally until the sago pearls become transparent, with a small white dot in the center.&nbsp;</li><li>Add the milk, sweetened condensed milk, egg yolks, vanilla, and the 50g of reserved caramel.&nbsp;</li><li>Cook over low heat, stirring constantly, until the broth becomes creamy.&nbsp;</li><li>Serve in a platter and finish with a little more caramel sauce on top.</li></ol>O contraste entre o doce do sagu, a cremosidade do caramelo e o toque salgado final transforma essa sobremesa em uma experiência completa.
