Originating in Italy, risotto in Italian means little rice and is a light and versatile dish that pleases many palates. From the most traditional to the most sophisticated, its main ingredient is arborio rice, which gives the dish its creamy texture when cooked with other ingredients.
Salt cod, typical of cold sea regions, is a fish that is widely used in cooking. Recipes that use salt cod are usually very healthy, as the fish is very low in fat and also has a high concentration of the omega-3 fatty acid which, among other benefits, helps fight high cholesterol.

Salt Cod Risotto with Jack Daniel’s
Preparation time: 45 minutes (+ the time to desalt the fish)
Yield: 4 servings

Ingredients:
1 large onion, grated
2 cups arborio rice
60 ml Jack Daniel’s
6 cups vegetable broth (as needed)
2 cups desalted salt cod, shredded into small slivers
80 g black olives
80 g cherry tomatoes
3 tablespoons grated parmesan cheese
3 tablespoons butter
2 tablespoons olive oil
Chopped parsley to taste as garnish
Salt to taste
For the broth:
2 carrots
2 medium onions
1 celery stalk
1 tablespoon butter
Preparation method:
Coarsely chop the vegetables for the broth, sauté with a little butter for 5 minutes and cover with water. Bring to a boil and turn the flame down to medium/low. For the risotto, get an appropriately sized sauce pan, preferably with a triple bottom.
Melt 1 tablespoon of butter with two tablespoons of olive oil, put the onion in the sauce pan and sauté until it becomes transparent.
Add the arborio rice and fry for two minutes.
Deglaze with Jack Daniel’s until it evaporates completely, then add one ladle at a time of the vegetable broth, always stirring until the liquid has been absorbed. For at least 10 minutes.
Around 10 minutes after it starts cooking in the previous steps, add the shredded cod and cherry tomatoes and keep stirring until the rice is al dente.
Turn off the heat. Next, add the olives, grated parmesan cheese and remaining butter (2 tablespoons, preferably cold) to the sauce pan and mix everything well.

Chef’s tips
To remove the salt from the cod (desalt), it is best to put the fish in an appropriately sized bowl, cover with water and refrigerate overnight, changing the water three or four times during this time.
The main secret to making risotto creamy and uniform is stirring the rice constantly and serving while still hot, to maintain the texture and flavor.
