Chicken salad with yogurt dressing

Ingredients
250 g cubed chicken breast
150 g iceberg lettuce
1 medium-sliced telegraph cucumber
2 slices of loaf of bread
5 cherry tomatoes cut in half

1 tablespoon of lemon juice
1 pinch of salt
Preparation Method
1. In a nonstick frying pan, heat olive oil over high heat. Add the cubed chicken and cook, stirring from time to time, for 8 minutes or until browned on all sides. Season with salt and pepper. Remove from heat and set aside.
2. To make the croutons, cut the crustless bread into small cubes, drizzle with some olive oil, and bake in a nonstick pan, in preheated oven, for about 6 minutes or until golden brown.
3. For the dressing, mix yogurt, olive oil, and lemon juice in a bowl.
4. Arrange the lettuce, cucumber, croutons, tomatoes, and chicken in a bowl and pour the dressing.
