Ingredients:
 

1.5 kg of bovine ribs
4 garlic cloves, minced
tablespoons of coarse salt
1 tablespoon of black pepper
1 tablespoon sweet paprika (optional)
1 tablespoon of olive oil
1/2 cup of water

Preparation method:
 

Preparing the rib:
Using a knife, make cuts between the rib bones to help with tenderness and seasoning.
 In a bowl, mix the minced garlic, coarse salt, black pepper, paprika and olive oil.
Rub this mixture on the ribs, ensuring that they are well seasoned.

Resting:
Let the ribs rest for at least 30 minutes to absorb the seasonings. If you can, let it marinate for a few hours or even overnight in the refrigerator.

Preparing the charcoal grill:
Preheat the charcoal grill over medium heat. If using charcoal, keep it burning.

Roasting the ribs:
Place the ribs on the grill with the bone side down.
Add water to the grill (this will help keep moisture in) and close the charcoal grill lid. 
 Roast for about 2 to 3 hours, turning the ribs every 30 minutes so they cook evenly. The time may vary depending on the thickness of the rib and the intensity of the fire.

Finishing:
When the ribs are tender and the meat begins to come off the bone, remove them from the charcoal grill and let them rest for 10 minutes before cutting.

Serving:
Cut into pieces and serve hot.
