Ingredients
4 eggs
2 cups sugar
1 cup corn oil
300 ml coconut milk
3 cups flour
1 tablespoon baking powder
50 g shredded dry coconut

Preparation method
1. Beat the eggs, sugar and oil in the blender.
2. Add the coconut milk and flour a little at a time and transfer to a bowl.
3. Add the baking powder and the dry coconut and mix well until fully incorporated throughout the batter.
4. Transfer to a greased cake pan and bake at 170 ºC (350 ºF) for 40 minutes.
