The aim is to break away from the traditional with a citrus cake that combines the lightness of homemade cake with a burst of lemon and lime flavor. Ingredients
3 eggs
2 cups sugar
1 cup corn oil
200 ml milk
3 cups flour
1 tablespoon baking powder
Juice of 1 lime
Zest of 1 lemon
Zest of 1 lime
Preparing the mixture
Beat the eggs, sugar and oil in the blender. This is the secret to a light and airy batter. Keep blending until the mixture is homogenous and whitish.
With the mixture still in the blender, gradually add the milk, alternating with the flour. This step is important for the ingredients to blend well and not form clumps.
Transfer the batter to a bowl, add the lime juice and the both the lime and lemon zest. These ingredients give the cake that refreshing citrus flavor.
Finally, add the baking powder and mix gently, ensuring that it is evenly distributed throughout the batter. Prepare the pan by greasing it with butter and dusting with flour.
Pour the batter into the prepare pan and bake it in the oven preheated to 170 ºC (350 ºF). The baking time is approximately 30 minutes, but be aware: each oven is unique, so test with a toothpick to make sure your cake is perfectly baked.
