The Easter holiday is marked by chocolates, delicious desserts and family traditions. One of these traditions, known and practiced by the vast majority, is responsible for a very rich cuisine that brought recipes and new flavors throughout the country: roasted fish.

Of Catholic origin, the practice of roasting fish on Good Friday and Easter Sunday comes from the idea of not consuming red meat, pork or chicken, as an allusion to the fasting carried out by some during this period.

Whether due to religious commitment, or the mild flavor and health benefits of its vitamins and minerals, a tilapia steak is an excellent choice that pleases many palates. This freshwater fish is versatile and easy to digest. So, how about a special recipe to serve at Easter? So, write it down:

½ lemon, squeezed
1 drizzle of olive oil

For the White Sauce

1 tablespoon flour
300 ml whole milk
1 cup cream cheese
salt and black pepper to taste
1 pinch nutmeg

To bread
2 eggs
2 cups breadcrumbs
150 g grated mozzarella cheese
50 g grated parmesan cheese
chopped parsley to taste

Preparation of the Fillet
1. Start the process by seasoning the fillets with a pinch of salt, black pepper to taste and a delicate drizzle of olive oil.
2. Then, squeeze half a lemon directly onto the fillets, incorporating the citrus juices into the seasonings.
3. Add 3 cloves of crushed garlic to intensify the flavors and, using your hands, make sure to distribute the seasonings evenly, covering each piece.
4. Allow the meat to marinate for an hour, thus enhancing the aromas and flavors.

Preparation of the White Sauce
1. In a sauce pan over low heat, melt a tablespoon of butter, making sure to stir constantly.
2. Incorporating the flour quickly to avoid burning, continue stirring while adding the milk and cream cheese.
3. Season with salt and pepper to taste, stirring until the sauce reaches the desired consistency.
4. Finish the white sauce, adding grated nutmeg once the desired consistency is reached.

Breading and cooking
1. Season two eggs by beating them with a fork and adding salt and pepper to taste.
2. Dip each fillet in the egg mixture and then in the breadcrumbs, ensuring uniform coverage.
3. Fry the fillets in a frying pan with previously heated oil until they reach an attractive golden color.

Assembly and baking
1. In a roasting pan, distribute a portion of the white sauce on the bottom.
2. Arrange the fish fillets side by side over the sauce in the roasting pan.
3. Pour the rest of the sauce over the fillets, and sprinkle grated cheese on top.
4. Preheat the oven to 200 °C (392 °F) and bake for 20 to 30 minutes, or until the cheese is melted and golden.
