Ingredients
570 ml of milk
200 ml of fresh cream
180 g of sugar
150 g of raw shelled pistachios
50 ml oil
30 g of pistachios (to add at the end)
Preparation Method
Ice cream base: In a sauce pan over low heat, add 570 ml of milk, 200 ml of fresh cream, and 180 g of sugar. Gently heat, stirring until the sugar dissolves (no boiling). Turn the heat off and set the mixture aside.
Pistachio paste: Place 150 g of raw shelled pistachios in a blender. Blend well to make a coarse flour. Add 50 ml of oil and blend again until you get a paste. Turn off the blender. Add the mixture from the sauce pan to the blender. Blend again until all ingredients are well mixed.
