How about preparing a delicious and accurate Leek risotto to enjoy the best of gastronomy in the comfort of your home? This recipe is ideal both for a romantic dinner for two, as well as for treating yourself to a tasty and sophisticated dish.


Ingredients: 

1 large, chopped onion

2 cups of arborio rice

60 ml of white wine

6 cups of vegetable broth (as needed)

1 chopped stalk of leek

3 tablespoons of grated parmesan cheese

2 tablespoons of butter

2 tablespoons of olive oil

Chopped parsley to taste as garnish

Salt to taste


For the broth: 

2 carrots

2 medium onions

Leek leaves


Preparation method: 

Start by preparing the broth: coarsely chop the carrots, onions and leek leaves. In a large sauce pan, cover the vegetables with water and bring to a boil. Then turn the flame down to medium/low and keep the broth warm.

Now, on to the risotto! In a Grano line sauce pan or casserole, melt a spoon of butter along with two spoons of olive oil. Put the onion and leek in the sauce pan and let it braise until they become transparent.

Now, add the arborio rice and wait to fry for two minutes. Then smoke with the white wine until the liquid evaporates completely and add three to four ladles of vegetable broth, stirring until the liquid dries up, for at least 10 minutes. 

After this period, if you want, add shredded codfish and cherry tomatoes to the sauce pan, stirring until the rice is al dente. 

Turn off the heat. Then add the grated parmesan cheese and the remaining butter (two spoons, preferably chilled). Mix everything very well, energetically.



That’s it! Transfer the leek risotto to a large serving dish, make a beautiful decoration with the chopped parsley and take it to the table to serve warm.
